Riding the express elevator up to level 70 of Swissôtel The Stamford in Singapore, the ascent is so fast that my ears barely get a chance to pop before the elevator goes ping, indicating its arrival.

A staff member from SKAI — a contemporary grill restaurant at the top of the Swissôtel building — welcomes us to the venue as we emerge from the elevator, before showing us to our table.

Looking around, the first thing I notice is the killer view of Singapore’s stunning skyline. In my opinion, the view here rivals that of the Skypark at Marina Bay Sands, mostly because it includes the iconic engineering marvel in its sights. The second thing I notice is the lively atmosphere — everyone seems to be enjoying themselves as they catch up with friends in an ultra-cool setting. And the third thing I can’t help but notice is the large number of western tourists and/or expats — apparently SKAI’s bottomless brunch and high tea is a major drawcard.

Being a Saturday afternoon, the venue is completely full with lots of large-group bookings. Thankfully, we booked ahead and managed to reserve a table next to the windows, which means we get to experience uninterrupted sky-high views of the Lion City, whilst sampling and savouring a range of dishes prepared by SKAI’s executive chef Paul Hallett and his team.

For chef Paul, growing up with rich agricultural surroundings in Wales cultivated his deep-rooted belief in using only high-quality produce and natural ingredients, an evident trait which has been incorporated into SKAI’s menu.

For lunch, you have the choice between a two and three-course set menu, put together with quality grains and salads, as well as fresh and tasteful mains. For dinner, the menu features a series of sharing plates and Ishiyaki (stone grill dishes), with an assortment of fresh fish, seafood and prime meats, which are specially sourced from Australia, America, Japan and Ireland, and grilled in SKAI’s Josper charcoal oven.

A selection of fine wines, beers and craft cocktails perfectly complements the dining experience which — set against a beautiful backdrop of the Singapore skyline — takes the wine and dine experience to new heights.

And, if there’s one thing that SKAI excels at, it’s the exquisite presentation of every single dish — especially its mouth-watering desserts and choux pastries.

As we make our way through the set menu, a dark thunderstorm begins to unfold outside. Being on the 70th floor of the Swissôtel building, this is by far the best vantage spot to watch the dramatic weather do its thing. Plus, the light maple wood, soft natural hues and organic textures featured across SKAI’s interior make the venue feel like a cosy escape, and the perfect setting for the rainy occasion. Or any special occasion for that matter.
